sweet sweet potatoes
I have to apologize for the leave of absence. It’s adjusting to a new city, new job and new friends that has left me unfocused on muddyfoosteps. The lack of posts doesn’t mean there has been a lack of sweet treats jumping out of the oven. The latest and one of my favorite hearty dishes were these roasted italian sweet potatoes.
Italian flavors are my favorite and I have a small tendency of throwing them into all my dishes, hence my fake feta tofu. Not only do these potatoes taste incredible, they are also packed with nutriton. They are an excellent source of vitamin A, vitamin C and manganese, also a good source of copper, dietary fiber, vitamin B6, potassium and iron.
- Sweet potatoes
- Italian seasonings
- Garlic powder
- Sea salt
- Black pepper
- Olive oil
- Preheat the oven to 350 degrees.
- In the meantime, peel the potatoes and cut them up.
- Toss all the ingredients together and make sure each piece is fully covered.
- Place the potatoes on a cooking sheet and bake for 25-30 minutes. If you like your potatoes crunchy and well done, leave them in a bit longer.
Sounds too good to be true? Well they kind of are. Sweet potatoes are antioxidant rich and an anti-inflammatory food. Switch up your meals and throw in some sweet potatoes for flavor and awesome health.
