fake feta

Yup, back to the grind with more tofu experimenting. This one, however, will be listed in the top 5 recipes. It’s a killer recipe that will make you forget all about cheese.

One of my all time favorite dishes is a simple salad made up of cucumbers, tomatoes, red onion, italian seasoning, olive oil, vinegar, and feta cheese. Well feta cheese isn’t really included in what I eat now so I needed to find a replacement.

Tofu seemed like the perfect bet; same color, texture, and let’s try taste. Tofu easily consumes the flavor of whatever you pair it with. So making it taste somewhat like feta wouldn’t seem too difficult.

  • Firm tofu (drained)
  • Italian seasonings
  • Garlic powder
  • Onion powder
  • Sea salt
  • Pepper
  • Red wine vinegar
  • Olive oil

First, you want to make sure you drain out all the extra liquid. You can check out an earlier post, to see how I drain the tofu. After that it’s as simple as throwing all the ingredients together. I would recommend letting the tofu mixture marinade for a couple of hours so that it can fully absorb all the flavors. Adjust the ingredients to your liking and play around to see what you like. I actually let my tofu marinade overnight so that it’s filled with flavor when I’m ready to eat it.

Use your ‘fake’ feta in all sorts of dishes. Pair it with a fresh garden salad, toss it along with cucumbers, tomato, and onion; or just eat it straight out of the bowl.

And I have to admit, it tasted pretty darn good!
