Unique flavonoid compounds
Lemons contain ‘unique flavonoid compounds’ that have antioxidant and anti-cancer properties. They are also an excellent source of Vitamin C. They help support optimal health and protect against rheumatoid arthritis.
When buying lemons, search for ones that have thin skin. The thicker the skin the less juice the fruit contains. Think of oranges. Oranges with thick skin are easier to peel and eat but the ones with the thin skin are the best for juicing.
Lemons will stay fresh at room temperature for about a week. If you don’t plan on using them within that time then store them in the fridge and they should last for up to 4 weeks.
Serving idea: Combine lemon juice with olive oil/flax oil, freshly crushed garlic and pepper to make a light and flavorful salad dressing
